BBQ Jackfruit Ribs

Ingredients

  • 1 can of jackfruit- 20oz
  • 1.25 c vital wheat gluten
  • 3 tbsp nutritional yeast
  • 1 tbsp smoked paprika
  • 1 tbsp onion powder
  • 1 tbsp garlic powder
  • 1 tsp mustard powder
  • 1 tsp black pepper
  • 1 tsp red chili flakes
  • 1 tsp liquid smoke
  • 3/4 c veggie stock (or water)
  • 3 tbsp soy sauce
  • About 1 cup BBQ sauce
  • 2 bay leaves

Steps

  1. Preheat oven to 375
  2. Drain the jackfruit, leave it whole and boil it in a sealed pot of water, 2 bay leaves & salt for 20 minutes.
  3. Drain the jackfruit, shred it with your fingers and throw away all the hard pieces and bulb pieces.
  4. In a big bowl, combine all the ingredients from jackfruit down to soy sauce.
  5. Mix thoroughly, for a long time. Until everything is formed into a sticky dough. You may need to add more water or vital wheat gluten depending on if its too dry or wet to stick together. Some pieces of jackfruit will fall out of the dough. This is normal!
  6. Separate into two balls of dough. Shape the ball of dough down and flatten it to be about 1in thick.
  7. If you have a cast iron skillet and a grill, put cast iron on the grill and preheat, the skillet should be well seasoned / sprayed with oil. We do this step to achieve the burnt crispiness on the ribs. If you don’t have a grill you can pan cook it stovetop until brown, then proceed to next step.
  8. Grill both sides about 6-7 minutes each side.
  9. Put it into a parchment lined baking pan. Coat both sides with BBQ sauce.
  10. Cover and bake 15 minutes. Flip dough and bake the other side 10 minutes.
  11. Slice into the slices you want and add one last coat of BBQ sauce!
  12. Enjoy!

The closest thing to the real, fall off the bone chewy ribs. Except Vegan! All vegan, plant-based ribs recipe.
