Buffalo Cauliflower Mac

Ingredients

  • 1 medium sized head cauliflower, cut into chunks like caluflower "wings"
  • 32 oz container of OG cheese
  • 1 lb pasta of your choice
  • 1/2 cup sliced green onions
  • buffalo sauce (We recommend Frank's Red Hot)
  • Blue cheese dressing OR Ranch
  • Breadcrumbs (we use Kelly's Croutons)

Steps

  1. Cook pasta according to your liking
  2. After you've cut the cauliflower into chunks, put them in a big bowl and add enough buffalo sauce to coat the pieces. Toss them thoroughly.
  3. Bake the cauliflower for 20 minutes at 375 or air fry them for 15 minutes at 400.
  4. Put your cooked pasta in a pot. Add the cheese. Stir and let simmer for 6-8 minutes.
  5. Add the cauliflower. Put on your plate.
  6. Top with crumbs, more buffalo sauce & blue cheese. Add green onions.

Notes

This is how we serve our Buffalo Cauliflower Mac at events and at our truck in Portland! It's so creamy and delicious. Feel free to add hot sauce directly to the buffalo sauce if you want to have it spicier as well!
